We have officially celebrated SPRINGING AHEAD with Daylight Savings Time.  While I do not cherish losing that 1-hour, I absolutely love that we are experiencing longer days!  And now, there is talk about

I don’t think anyone will argue we live in challenging times. It is not always easy to know what to do, how we might help our family & friends, or even how to plan for the future, whether near or far.
Personally, there are many daydream moments as of late when I envision being somewhere else I can retreat to and recharge. I imagine many of you might feel the same way.
With those daydreams, we believe doing exactly that is part of travel’s true value.
The value of our travels is the time we take to decompress. It is the journey’s experiences that are meaningful for us, the communities we visit, and the contributions we knowingly make to the greater good. It is sharing our new stories with family and friends and thinking affectionately about the people and places we visited a year after returning home. And it is the peace we allow ourselves to feel when we are free of our daily routine and restrictions. We can all use a little more peace now if only peace of mind.

Chilean Floating Islands (Leche Nevada)

INGREDIENTS:
Meringue:
1 egg white
1 tablespoon sugar
Vanilla custard:
2 cups milk
2 tablespoons sugar
1 teaspoon vanilla extract
1 egg yolk
2 tablespoons cornstarch
Cinnamon to sprinkle

Directions
Meringue: In a small bowl, beat egg white with an electric mixer. Add 1 tablespoon of sugar and beat until it is shiny. Set aside.
Custard: In a large saucepan, add 1-3/4 cups of milk, 2 tablespoons of sugar and 1 teaspoon of vanilla. In low heat bring to a simmer. Scoop some meringue with a spoon. Using another spoon gently transfer meringue from spoon to spoon, into milk.
Poach for 1 minute each side. Remove from heat and set them on a plate.
In a small bowl, mix well 1/4 cup of milk, 2 tablespoons of cornstarch and 1 yolk. Slowly pour this mixture into the milk and stir constantly over low heat. Let it cook for 2 minutes (stirring constantly).
Serve custard in 2 serving glasses. Place 3 meringues on top and sprinkle with ground cinnamon.
